Can’t Stop Baking These Cookies – Third Night in a Row!

Some recipes are so simple and delicious that they quickly become a family favourite. These soft, buttery cookies are easy to make, use everyday ingredients, and are perfect with a cup of tea or coffee.

Ingredients

  • 1 cup (225 g) butter, softened
  • ¾ cup (150 g) sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 cup chocolate chips (optional)

Instructions

1. Prepare the Dough

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, then mix well.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Slowly add the dry ingredients to the butter mixture and mix until a soft dough forms.
  6. Fold in chocolate chips if using.

2. Shape the Cookies

  1. Scoop small portions of dough and roll them into balls.
  2. Place them on a baking tray lined with baking paper.
  3. Leave space between each cookie because they will spread slightly.

3. Bake

Bake for 10–12 minutes until the edges are lightly golden.

Let them cool for a few minutes before moving them to a plate—the centres will become perfectly soft.

Tips for Bakery-Style Cookies

✅ Use softened butter, not melted butter, for the best texture.
✅ Chill the dough for 20–30 minutes if you want thicker cookies.
✅ Add a pinch of sea salt on top before baking for a sweet-and-salty flavour.
✅ Store in an airtight container to keep them fresh.

Easy Variations

Double chocolate cookies: Add cocoa powder and extra chocolate chips.
Nut cookies: Mix in chopped walnuts or pecans.
Cinnamon cookies: Add 1 teaspoon cinnamon for a warm flavour.

These cookies are the kind of treat that makes sense to bake again and again: simple ingredients, quick preparation, and a homemade taste that beats store-bought every time.
