Fried Potatoes and Onions
A simple, comforting side dish that’s crispy on the outside and tender on the inside.
Ingredients
- 4 medium potatoes, thinly sliced or diced
- 1 large onion, thinly sliced
- 3 tablespoons vegetable oil or butter (or a combination)
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- ½ teaspoon garlic powder (optional)
- 1 teaspoon paprika (optional)
- Chopped fresh parsley (optional, for garnish)
Instructions
- Heat the oil or butter in a large skillet over medium heat.
- Add the potatoes in an even layer. Cook for 8–10 minutes, stirring only occasionally so they develop a golden crust.
- Stir in the onions and continue cooking for another 10–15 minutes, stirring every few minutes, until the potatoes are tender and the onions are caramelized.
- Season with salt, pepper, and any optional seasonings.
- Garnish with fresh parsley and serve hot.
Tips
- For extra-crispy potatoes, soak the sliced potatoes in cold water for 20–30 minutes, then drain and pat them completely dry before cooking.
- A cast-iron skillet gives excellent browning.
- Add diced bell peppers, mushrooms, or crumbled bacon for extra flavor.
