Ingredients

  • 500 g (1 lb) chicken thighs (boneless, skinless—best for juiciness)
    (chicken breast works too, but cooks faster and can be drier)
  • Salt and black pepper
  • 1 tsp oil

Teriyaki sauce

  • ¼ cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar (or lemon juice)
  • 1 tsp grated garlic
  • 1 tsp grated ginger
  • 1 tbsp water
  • 1 tsp cornstarch (for thickening)

Step 1: Make the sauce

In a small pan:

  • Combine soy sauce, honey, vinegar, garlic, ginger
  • Heat for 2–3 minutes
  • Mix cornstarch with water, add in
  • Stir until slightly thick, then cool

Step 2: Prep the chicken

  • Cut chicken into bite-sized pieces
  • Season lightly with salt and pepper
  • Toss with 1–2 tbsp of the teriyaki sauce (optional marinade 15–30 min)

Step 3: Air fry

  • Preheat air fryer to 190°C (375°F)
  • Lightly oil basket
  • Cook chicken for 10–14 minutes, shaking halfway
  • Cook until golden and internal temp reaches 75°C (165°F)

Step 4: Glaze it

  • Toss cooked chicken in remaining teriyaki sauce
  • Return to air fryer for 1–2 minutes for sticky glaze (optional but delicious)
