Brown Sugar Pork Chops (Sweet, Savory, and Perfectly Caramelized)

These brown sugar pork chops are a quick, flavorful dinner with a sweet caramelized crust, a savory garlic-herb finish, and juicy pork underneath.

Ingredients

  • 4 boneless or bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 3 tablespoons brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)
  • 2 tablespoons butter
  • 2–3 cloves garlic, minced
  • 1 tablespoon soy sauce (optional, for extra savory flavor)

Instructions

  1. Prepare the pork chops
    • Pat the pork chops dry with paper towels.
    • Mix brown sugar, paprika, garlic powder, onion powder, salt, pepper, and thyme.
    • Rub the seasoning mixture generously over both sides of the pork chops.
  2. Sear for caramelization
    • Heat olive oil in a large skillet over medium-high heat.
    • Add pork chops and cook for about 3–4 minutes per side until a golden crust forms.
  3. Add the flavor
    • Reduce heat to medium.
    • Add butter and garlic to the pan.
    • Spoon the melted butter over the pork chops for 1–2 minutes.
    • Add soy sauce if using.
  4. Finish cooking
    • Continue cooking until the pork reaches an internal temperature of 145°F (63°C).
    • Remove from heat and let rest for 3–5 minutes before serving.

Tips for the best results

  • Let pork chops sit at room temperature for about 15–20 minutes before cooking for more even cooking.
  • Don’t overcook—the biggest cause of dry pork chops is cooking them too long.
  • For extra caramelization, use a cast-iron skillet if available.
