Ingredients
- 1 cup milk
- 1/2 cup water

- 2 cups tapioca flour
- 2 large eggs

Instructions
- Preheat oven to 400°F (200°C).
- In a saucepan, heat milk, water, oil, and salt until just boiling.
- Pour the hot mixture over the tapioca flour in a bowl. Stir until combined and let cool for 5 minutes.
- Mix in eggs one at a time.
- Stir in the cheese until you get a sticky dough.
- Scoop small balls onto a greased baking sheet or mini muffin tin.
- Bake for 18–22 minutes until puffed and lightly golden.

- Parmesan gives a stronger flavor; mozzarella makes them stretchier.
