  • 1 cup milk
  • 1/2 cup water
  • 1/4 cup olive oil or butter
  • 1 tsp salt
  • 2 cups tapioca flour
  • 2 large eggs
  • 1 to 1 1/2 cups grated Parmesan or mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, heat milk, water, oil, and salt until just boiling.
  3. Pour the hot mixture over the tapioca flour in a bowl. Stir until combined and let cool for 5 minutes.
  4. Mix in eggs one at a time.
  5. Stir in the cheese until you get a sticky dough.
  6. Scoop small balls onto a greased baking sheet or mini muffin tin.
  7. Bake for 18–22 minutes until puffed and lightly golden.

Tips

  • Parmesan gives a stronger flavor; mozzarella makes them stretchier.
  • The dough is naturally gluten-free because of the tapioca flour.
  • Best served warm.
