Ingredients

  • 2 medium cucumbers, sliced
  • 2–3 tomatoes, cut into wedges or chunks
  • 1 small red or white onion, thinly sliced
  • ½ cup vinegar (white, apple cider, or red wine vinegar)
  • ¼ cup water
  • 1–2 tablespoons sugar (optional)
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh herbs such as dill, parsley, or basil (optional)

Instructions

  1. Combine the cucumbers, tomatoes, and onion in a large bowl.
  2. In a separate bowl or jar, whisk together the vinegar, water, sugar, olive oil, salt, and pepper.
  3. Pour the marinade over the vegetables and toss gently.
  4. Cover and refrigerate for at least 30 minutes, preferably 2–4 hours.
  5. Stir before serving and garnish with fresh herbs if desired.

  • For extra flavor, let it marinate overnight.
  • Add sliced bell peppers or feta cheese for variation.
  • Adjust the vinegar-to-water ratio to make it more tangy or milder.
