Slow-cooker potatoes and onions are an easy, flavorful side dish.
Ingredients
- 2 lb (900 g) potatoes, sliced or cubed
- 1–2 large onions, sliced
- 2–3 tbsp butter or olive oil
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 tsp garlic powder (optional)
- 1 tsp dried thyme, rosemary, or paprika (optional)
Instructions
- Lightly grease the slow cooker.
- Layer the potatoes and onions in the cooker.
- Drizzle with melted butter or olive oil.
- Sprinkle with salt, pepper, and any additional seasonings.
- Toss gently to coat.
- Cover and cook:
- Low: 5–7 hours, or
- High: 2½–4 hours,
until the potatoes are tender.
Optional additions
- Shredded cheddar cheese during the last 20–30 minutes
- Crumbled bacon after cooking
- Bell peppers or mushrooms for extra flavor
- Fresh parsley or chives before serving
Serving ideas
