Slow-cooker potatoes and onions are an easy, flavorful side dish.

Ingredients

  • 2 lb (900 g) potatoes, sliced or cubed
  • 1–2 large onions, sliced
  • 2–3 tbsp butter or olive oil
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp dried thyme, rosemary, or paprika (optional)

Instructions

  1. Lightly grease the slow cooker.
  2. Layer the potatoes and onions in the cooker.
  3. Drizzle with melted butter or olive oil.
  4. Sprinkle with salt, pepper, and any additional seasonings.
  5. Toss gently to coat.
  6. Cover and cook:
    • Low: 5–7 hours, or
    • High: 2½–4 hours,

    until the potatoes are tender.

Optional additions

  • Shredded cheddar cheese during the last 20–30 minutes
  • Crumbled bacon after cooking
  • Bell peppers or mushrooms for extra flavor
  • Fresh parsley or chives before serving

Serving ideas

These potatoes pair well with grilled chicken, roasted meat, fish, or eggs for breakfast.

For a crispier finish, transfer the cooked potatoes to a baking sheet and broil for a few minutes before serving.
