Freezing bread has several benefits:

Some people also claim freezing bread makes it “healthier.” Here’s what the evidence says:

  • Freezing, then thawing (or toasting) bread can increase the amount of resistant starch slightly. Resistant starch is digested more slowly than regular starch and may modestly reduce the rise in blood sugar after eating.
