Magic Tomato Salad

Ingredients

  • 4 ripe tomatoes, sliced or chopped
  • 1 small red onion, thinly sliced
  • 1 handful fresh basil leaves (or parsley/cilantro)
  • 2–3 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice or vinegar
  • 1 small garlic clove, finely minced (optional)
  • Salt and freshly ground black pepper, to taste
  • A pinch of chili flakes (optional)
  • A little crumbled feta cheese (optional)

Instructions

  1. Place tomatoes and onion in a bowl.
  2. Add salt and let sit for 10–15 minutes so the tomatoes release their juices.
  3. Add olive oil, lemon juice or vinegar, garlic, pepper, and herbs.
  4. Toss gently and let the salad rest for another 10 minutes before serving.
  5. Add feta or extra herbs if desired.

  • Don’t refrigerate tomatoes before making the salad; cold temperatures reduce their flavor.
