Ingredients

  • 1 cup natural peanut butter (no added sugar)
  • 1/2 cup almond flour
  • 2–3 tablespoons powdered erythritol or another low-carb sweetener (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional, depending on your peanut butter)
  • 1/3 cup unsweetened shredded coconut (optional)
  • 1/3 cup sugar-free chocolate chips (optional)

Instructions

  1. In a bowl, combine peanut butter, almond flour, sweetener, vanilla extract, and salt.
  2. Mix until a thick dough forms. If the mixture is too soft, add a little more almond flour.
  3. Stir in shredded coconut or sugar-free chocolate chips if using.
  4. Roll the mixture into small bite-sized balls.
  5. Place on a lined plate or tray.
  6. Refrigerate for at least 30 minutes to allow them to firm up.

Storage

  • Store in an airtight container in the refrigerator for up to 1–2 weeks.
  • You can also freeze them for longer storage.
