🌮 Loaded Cheesy Pocket Tacos

🛒 Ingredients (for 4 servings)

  • 8 small tortillas (soft or flour)
  • 300–400 g minced beef or chicken (or soy mince for vegetarian)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tsp chili powder (adjust to taste)
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt & black pepper to taste
  • 1 tbsp oil
  • 1 cup shredded cheese (mozzarella or cheddar)

🥗 Optional fillings

  • Lettuce (shredded)
  • Tomatoes (diced)
  • Jalapeños
  • Sweet corn
  • Sour cream or yogurt sauce
  • Salsa or ketchup

👨‍🍳 Instructions

1. Cook the filling

  • Heat oil in a pan
  • Add onion and garlic, sauté until soft
  • Add minced meat and cook until browned
  • Add spices, salt, and pepper
  • Cook until well combined and slightly dry

2. Prepare the pockets

  • Warm tortillas slightly so they fold easily
  • Place filling on one side of each tortilla
  • Add a generous amount of cheese on top

3. Fold & toast

  • Fold tortillas into half-moons (pocket shape)
  • Heat a pan (no oil or very little)
  • Toast each pocket 2–3 minutes per side until golden and crispy
  • Cheese should melt inside

4. Serve

  • Slice in half if you want
  • Serve with salsa, sour cream, or yogurt dip

🔥 Tips

  • Don’t overfill or they may open while cooking
  • Use low heat so cheese melts properly
  • Add chili flakes for extra spice
  • Brush tortillas with a little butter for extra crispiness
