Cheesy Cheeseburger Pockets

These handheld cheeseburger pockets are great for lunch, dinner, or a quick snack.

Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 can refrigerated biscuit dough or pizza dough
  • 1 tbsp ketchup (optional)
  • 1 tsp mustard (optional)
  • 1 egg, beaten (for egg wash)
  • Sesame seeds (optional)

Instructions

  1. Cook the filling
    • In a skillet over medium heat, cook the ground beef and onion until the beef is browned.
    • Drain excess fat.
    • Stir in garlic powder, salt, pepper, ketchup, and mustard if using.
    • Let cool slightly.
  2. Add the cheese
    • Mix the shredded cheddar into the beef mixture.
  3. Prepare the dough
    • Preheat the oven to 375°F (190°C).
    • Roll out the dough and cut it into squares or circles.
  4. Fill the pockets
    • Place a spoonful of the cheeseburger mixture in the center of each piece of dough.
    • Fold over and seal the edges with a fork.
  5. Bake
    • Place on a lined baking sheet.
    • Brush with beaten egg and sprinkle with sesame seeds if desired.
    • Bake for 15–20 minutes, or until golden brown.
  6. Serve
    • Let cool for a few minutes before serving.
    • Enjoy with ketchup, mustard, pickles, or your favorite dipping sauce.

Variations

  • Add diced pickles for a classic cheeseburger flavor.
  • Use pepper jack cheese for extra heat.
  • Mix in cooked bacon for a bacon cheeseburger version.
  • Add sautéed mushrooms for a richer filling.

These pockets freeze well, making them a convenient make-ahead meal.
