Classic Bacon Pea Salad

Ingredients

  • 4 cups frozen peas, thawed (do not cook)
  • 6 slices bacon, cooked until crisp and crumbled
  • ½ cup red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup mayonnaise
  • ½ cup sour cream (or plain Greek yogurt)
  • 1 teaspoon sugar (optional)
  • 1 tablespoon apple cider vinegar or lemon juice
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook bacon until crisp, then cool and crumble.
  2. In a large bowl, combine thawed peas, bacon, red onion, and cheddar cheese.
  3. In a separate small bowl, mix mayonnaise, sour cream, sugar, vinegar/lemon juice, salt, and pepper.
  4. Pour the dressing over the pea mixture and gently toss until everything is coated.
  5. Cover and refrigerate for at least 1 hour before serving to let the flavors blend.
  6. Sprinkle with parsley before serving if desired.

  • Add chopped hard-boiled eggs for a more traditional potluck version.
  • Use crispy bacon for the best texture.
