Slow Cooker Cabbage, Sausage & Comfort Stew

Ingredients

  • 1 large head green cabbage, chopped into large pieces
  • 1½ pounds smoked sausage (kielbasa works well), sliced
  • 1 large onion, sliced
  • 4–5 cloves garlic, minced
  • 4 large carrots, sliced
  • 1½ pounds baby potatoes, halved
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 tablespoon Worcestershire sauce
  • Optional: red pepper flakes for a little heat

Instructions

  1. Add the potatoes, carrots, onion, and garlic to the bottom of the slow cooker.
  2. Layer the cabbage and sliced sausage on top.
  3. Mix the tomatoes, broth, tomato paste, Worcestershire sauce, butter, and seasonings together. Pour over everything.
  4. Cover and cook:
    • Low: 6–8 hours
    • High: 3–4 hours
  5. Stir gently before serving and adjust seasoning if needed.

Serve with crusty bread to soak up the flavorful broth.

Guest-worthy tip: Add a splash of apple cider vinegar or lemon juice right before serving. The little bit of acidity balances the richness and makes the flavors pop.
