Here’s a quick and crispy recipe for cheesy corn fritters:

Ingredients

  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 eggs
  • ½ cup flour
  • 2 tbsp cornmeal (optional, for extra crunch)
  • 2 green onions, chopped
  • 1 small chili, finely chopped (optional)
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, mix:
    • corn
    • cheese
    • eggs
    • flour
    • cornmeal
    • green onions
    • chili
    • seasonings
  2. Stir until a thick batter forms. If too wet, add a little more flour.
  3. Heat shallow oil in a pan over medium heat.
  4. Scoop spoonfuls of batter into the pan and flatten slightly.
  5. Fry 2–3 minutes per side until golden brown and crispy.
  6. Drain on paper towels.
