Sausage and Cheese Cornbread Casserole
This is a hearty, baked comfort dish that combines savory sausage, melty cheese, and soft, slightly sweet cornbread. It works great for breakfast, brunch, or dinner.

- 300–400 g Breakfast Sausage (or any sausage, sliced or crumbled)
- 1 cup shredded Cheddar Cheese
- 1 box cornbread mix (or homemade batter) Cornbread
- 2 eggs
- 1 cup milk
- 2 tbsp butter (melted)
- 1 small onion (chopped, optional)
- 1/2 cup bell pepper (optional)
- Salt and black pepper to taste
- 1/2 tsp chili flakes or paprika (optional)
🍳 Instructions
1. Cook the sausage
- Heat a pan over medium heat
- Cook sausage until browned and fully cooked
- Add onion/pepper if using and sauté until soft
- Drain excess fat if needed
2. Prepare cornbread batter
- In a bowl, mix:
- cornbread mix
- eggs
- milk
- melted butter
- Stir until smooth (don’t overmix)
3. Combine layers
- Preheat oven to 180°C (350°F)
- Grease a baking dish
- Spread cooked sausage evenly on the bottom
- Pour cornbread batter over it
- Sprinkle cheddar cheese on top
4. Bake
- Bake for 30–40 minutes
- Check with a toothpick (should come out clean from cornbread layer)
- Top should be golden and slightly crispy
