Sausage and Cheese Cornbread Casserole

This is a hearty, baked comfort dish that combines savory sausage, melty cheese, and soft, slightly sweet cornbread. It works great for breakfast, brunch, or dinner.

  • 300–400 g Breakfast Sausage (or any sausage, sliced or crumbled)
  • 1 cup shredded Cheddar Cheese
  • 1 box cornbread mix (or homemade batter) Cornbread
  • 2 eggs
  • 1 cup milk
  • 2 tbsp butter (melted)
  • 1 small onion (chopped, optional)
  • 1/2 cup bell pepper (optional)
  • Salt and black pepper to taste
  • 1/2 tsp chili flakes or paprika (optional)

🍳 Instructions

1. Cook the sausage

  • Heat a pan over medium heat
  • Cook sausage until browned and fully cooked
  • Add onion/pepper if using and sautĂ© until soft
  • Drain excess fat if needed

2. Prepare cornbread batter

  • In a bowl, mix:
    • cornbread mix
    • eggs
    • milk
    • melted butter
  • Stir until smooth (don’t overmix)

3. Combine layers

  • Preheat oven to 180°C (350°F)
  • Grease a baking dish
  • Spread cooked sausage evenly on the bottom
  • Pour cornbread batter over it
  • Sprinkle cheddar cheese on top

4. Bake

  • Bake for 30–40 minutes
  • Check with a toothpick (should come out clean from cornbread layer)
  • Top should be golden and slightly crispy
