This is a rich, comforting dish featuring juicy chicken breasts topped with creamy spinach, crispy bacon, and savory mushrooms.

Ingredients (Serves 4)

For the chicken

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

For the topping

  • 6 slices bacon, chopped
  • 250g mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

1. Cook the bacon

  • In a large skillet, cook the bacon until crisp.
  • Remove and set aside, leaving about 1 tablespoon of bacon fat in the pan.

2. Cook the chicken

  • Season the chicken with paprika, garlic powder, salt, and pepper.
  • Heat olive oil in the skillet over medium-high heat.
  • Cook chicken for 5–7 minutes per side, or until fully cooked (internal temperature 75°C / 165°F).
  • Remove and keep warm.

3. Sauté mushrooms and spinach

  • In the same skillet, add mushrooms and cook until browned.
  • Add garlic and cook for 30 seconds.
  • Stir in spinach and cook until wilted.

4. Make the cream sauce

  • Pour in the cream and bring to a gentle simmer.
  • Stir in Parmesan cheese until melted.
  • Season with salt and pepper.
  • Add the cooked bacon back to the sauce.

5. Smother the chicken

  • Return the chicken to the skillet or place it on serving plates.
  • Spoon the creamy spinach, mushroom, and bacon mixture generously over the chicken.
