🍗 Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms
This is a rich, comforting dish featuring juicy chicken breasts topped with creamy spinach, crispy bacon, and savory mushrooms.
Ingredients (Serves 4)
For the chicken
- 4 boneless, skinless chicken breasts
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
- 2 tablespoons olive oil
For the topping
- 6 slices bacon, chopped
- 250g mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
1. Cook the bacon
- In a large skillet, cook the bacon until crisp.
- Remove and set aside, leaving about 1 tablespoon of bacon fat in the pan.
2. Cook the chicken
- Season the chicken with paprika, garlic powder, salt, and pepper.
- Heat olive oil in the skillet over medium-high heat.
- Cook chicken for 5–7 minutes per side, or until fully cooked (internal temperature 75°C / 165°F).
- Remove and keep warm.
3. Sauté mushrooms and spinach
- In the same skillet, add mushrooms and cook until browned.
- Add garlic and cook for 30 seconds.
- Stir in spinach and cook until wilted.
4. Make the cream sauce
- Pour in the cream and bring to a gentle simmer.
- Stir in Parmesan cheese until melted.
- Season with salt and pepper.
- Add the cooked bacon back to the sauce.
5. Smother the chicken
- Return the chicken to the skillet or place it on serving plates.
- Spoon the creamy spinach, mushroom, and bacon mixture generously over the chicken.
