Ingredients

  • ½ cup fresh strawberries, chopped
  • 1 cup milk of choice (dairy, almond, oat, or coconut milk)
  • 3 tablespoons chia seeds
  • 1–2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon orange zest
  • 2 tablespoons fresh orange juice
  • ½ teaspoon vanilla extract (optional)
  • A few extra strawberry slices and orange zest for topping

Instructions

  1. Add the milk, orange juice, orange zest, honey (or maple syrup), and vanilla extract to a bowl or jar. Stir well.
  2. Add the chia seeds and mix thoroughly to prevent clumping.
  3. Let the mixture sit for 5–10 minutes, then stir again.
  4. Cover and refrigerate for at least 3–4 hours, or overnight, until it becomes thick and pudding-like.
  5. Top with chopped strawberries and a little extra orange zest before serving.
