Oven-Baked Potato Ring

Here’s a simple and delicious recipe for an Oven-Baked Potato Ring, perfect as a side dish or light meal.

Oven-Baked Potato Ring

Ingredients

  • 2 lb (900 g) potatoes, peeled and cubed
  • 2 tablespoons butter
  • ½ cup (50 g) grated Parmesan cheese
  • 1 cup (100 g) shredded cheddar or mozzarella cheese
  • 1 egg
  • 2 tablespoons chopped fresh parsley (optional)
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Butter or cooking spray for greasing the pan

Optional filling:

  • Cooked bacon bits or diced ham
  • Sautéed mushrooms
  • Spinach
  • Extra cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a ring (Bundt) pan or oven-safe ring mold.
  2. Cook the potatoes in salted boiling water for 15–20 minutes, until fork-tender. Drain well.
  3. Mash the potatoes with the butter until smooth. Stir in the Parmesan, shredded cheese, egg, garlic powder, parsley (if using), salt, and pepper.
  4. Fill the pan.
    • Spoon about two-thirds of the potato mixture into the prepared pan, pressing it against the bottom and sides.
    • If using a filling, add it in the center.
    • Cover with the remaining potato mixture and smooth the top.
  5. Bake for 30–40 minutes, or until the top is golden and the edges are slightly crisp.
  6. Let the potato ring rest for 5–10 minutes, then carefully invert it onto a serving plate.

Serve with:

  • Roasted chicken or beef
  • A fresh green salad
  • Steamed vegetables
  • Sour cream, gravy, or a creamy herb sauce

For extra flavor, sprinkle the top with a little more Parmesan and chopped parsley just before serving.
