Oven-Baked Potato Ring
Ingredients
- 2 lb (900 g) potatoes, peeled and cubed
- 2 tablespoons butter
- ½ cup (50 g) grated Parmesan cheese
- 1 cup (100 g) shredded cheddar or mozzarella cheese
- 1 egg
- 2 tablespoons chopped fresh parsley (optional)
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
- Butter or cooking spray for greasing the pan
Optional filling:
- Cooked bacon bits or diced ham
- Sautéed mushrooms
- Spinach
- Extra cheese
Instructions
- Preheat the oven to 375°F (190°C). Grease a ring (Bundt) pan or oven-safe ring mold.
- Cook the potatoes in salted boiling water for 15–20 minutes, until fork-tender. Drain well.
- Mash the potatoes with the butter until smooth. Stir in the Parmesan, shredded cheese, egg, garlic powder, parsley (if using), salt, and pepper.
- Fill the pan.
- Spoon about two-thirds of the potato mixture into the prepared pan, pressing it against the bottom and sides.
- If using a filling, add it in the center.
- Cover with the remaining potato mixture and smooth the top.
- Bake for 30–40 minutes, or until the top is golden and the edges are slightly crisp.
- Let the potato ring rest for 5–10 minutes, then carefully invert it onto a serving plate.
