Cucumber sandwich tea sandwiches are a classic light snack, especially for afternoon tea. They’re simple, refreshing, and can be made ahead for gatherings.

Classic Cucumber Tea Sandwiches

Ingredients (makes about 20 small sandwiches):

  • 1 large English cucumber (or 2 small cucumbers)
  • 10 slices soft white or whole wheat sandwich bread
  • 4 oz (115 g) cream cheese, softened
  • 2–3 tbsp mayonnaise or plain Greek yogurt
  • 1 tbsp fresh dill, finely chopped (optional)
  • 1 tsp lemon juice
  • Salt and black pepper, to taste
  • Butter (optional, for spreading)

Instructions:

  1. Prepare the cucumber:
    Slice the cucumber very thinly. Sprinkle lightly with salt and let sit for 10–15 minutes, then pat dry with paper towels to prevent soggy sandwiches.
  2. Make the spread:
    Mix cream cheese, mayonnaise (or yogurt), dill, lemon juice, pepper, and a pinch of salt until smooth.
  3. Assemble:
    Spread the cream cheese mixture on each bread slice. Arrange cucumber slices evenly over half the slices, then top with the remaining bread.
  4. Trim and serve:
    Remove crusts if desired and cut into small rectangles, squares, or triangles.

Tips for elegant tea sandwiches:

  • Use thin, soft bread and slice cucumbers as thin as possible.
  • Add fresh mint, chives, or a little smoked salmon for variations.
  • Cover finished sandwiches with a slightly damp paper towel and plastic wrap to keep them fresh before serving.

They pair well with tea, lemonade, fruit, and other small bites such as Scone or small pastries.
