🥗 Healthy Pickled Beets
Ingredients
- 4–5 medium beets Beetroot
- 1 cup apple cider vinegar
- 1 cup water
- 1–2 tbsp honey (optional, or skip for low sugar)
- 1 tsp salt
- 1 tsp whole peppercorns (optional)
- 1–2 cloves garlic (optional)
- 1 bay leaf (optional)
Instructions
- Cook the beets
- Wash beets and boil or roast them until tender (about 30–45 minutes boiling, or 40–50 minutes roasting).
- Let them cool, then peel and slice.
- Make the brine
- In a pot, combine vinegar, water, salt, and optional honey.
- Bring to a gentle simmer until salt dissolves.
- Pack the jar
- Place sliced beets in a clean glass jar.
- Add garlic, peppercorns, or bay leaf if using.
- Add brine
- Pour hot brine over beets until fully covered.
- Cool and store
- Let it cool, then refrigerate.
- Ready in 24–48 hours, better after a few days.
