Ingredients (Makes 12–16 crostini)
- 1 baguette, sliced into ½-inch rounds
- 2 tablespoons olive oil
- 250 g (8 oz) cooked shrimp, peeled and deveined
- 2 ripe avocados
- 1 tablespoon lime juice
- 1 small garlic clove, minced
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh cilantro or parsley
- Red pepper flakes (optional)
- Cherry tomatoes, finely diced (optional garnish)
Instructions
1. Prepare the Crostini
- Preheat the oven to 190°C (375°F).
- Arrange baguette slices on a baking sheet.
- Brush both sides lightly with olive oil.
- Bake for 8–10 minutes, turning once, until golden and crisp.
2. Make the Avocado Spread
- In a bowl, mash the avocados.
- Add lime juice, minced garlic, salt, and pepper.
- Mix until creamy but still slightly chunky.
3. Prepare the Shrimp
- If using cooked shrimp, pat dry and chop into bite-sized pieces if large.
- Toss with a little olive oil, cilantro or parsley, and a pinch of salt and pepper.
4. Assemble
- Spread a generous layer of avocado mixture onto each crostini.
- Top with one or two shrimp.
- Garnish with diced cherry tomatoes, extra herbs, or a sprinkle of red pepper flakes if desired.
