Yes—many people do eat Brussels sprouts, although they have a reputation for being a “love them or hate them” vegetable.
A lot of the dislike comes from how they were traditionally prepared (for example, boiled too long, which can make them soft and sulfur-smelling). When cooked differently, they can taste much better:
- Roasted Brussels sprouts: caramelized edges, slightly sweet flavor
- Sautéed with garlic or olive oil: more savory and crisp
- Shredded into salads or slaws: crunchy and fresh
- Air-fried: crispy with a nutty taste
Nutritionally, Brussels sprouts are rich in:
- fiber (supports digestion),
- vitamin C,
- vitamin K,
- folate,
- plant compounds such as glucosinolates that are being studied for health effects.
Some people avoid them because they can cause gas or bloating, especially in larger amounts, since they contain fermentable carbohydrates and fiber.
So yes—people absolutely eat them. The bigger question is whether they’ve had them cooked well. A properly roasted Brussels sprout is a very different experience from an overboiled one. 🙂
