Hungarian Esterházy Torte (Esterházy Torta)
Esterházy torte is a famous Hungarian dessert made with layers of nut-based meringue cake, a rich vanilla buttercream, and the signature white glaze with chocolate decoration. It is named after the Hungarian noble Prince Paul III Anton Esterházy and is a classic Central European pastry.
Ingredients
For the cake layers
- 8 egg whites
- 200 g (1 cup) sugar
- 250 g (2½ cups) finely ground walnuts
- 2 tablespoons flour
- 1 teaspoon lemon zest
- Pinch of salt
For the buttercream filling
- 8 egg yolks
- 150 g (¾ cup) sugar
- 300 ml (1¼ cups) milk
- 2 tablespoons cornstarch or flour
- 1 teaspoon vanilla extract
- 250 g (1 cup + 2 tablespoons) unsalted butter, softened
For the glaze
- 200 g (about 1½ cups) powdered sugar
- 2–3 tablespoons lemon juice or water
- 50 g (about ⅓ cup) dark chocolate, melted
Instructions
1. Make the cake layers
- Preheat oven to 350°F (175°C).
- Draw five or six circles (about 8 inches / 20 cm wide) on parchment paper.
- Whip egg whites with salt until foamy, then gradually add sugar and beat until stiff peaks form.
- Fold in ground walnuts, flour, and lemon zest.
- Spread the mixture thinly onto the parchment circles.
- Bake each layer for about 10–12 minutes until lightly golden.
- Cool completely.
2. Prepare the cream
- Whisk egg yolks, sugar, cornstarch, and milk together.
- Cook gently over medium heat, stirring until thickened.
- Cool completely.
- Beat softened butter until creamy, then gradually add the custard and vanilla.
3. Assemble the torte
- Place one cake layer on a serving plate.
- Spread a thin layer of buttercream.
- Repeat until all layers are stacked.
- Cover the top and sides with remaining cream.
- Chill for several hours or overnight.
4. Decorate
- Mix powdered sugar with lemon juice to make a smooth white glaze.
- Spread over the top.
- Pipe thin lines of melted chocolate across the glaze.
- Drag a toothpick through the chocolate lines in opposite directions to create the traditional feathered pattern.
