Hungarian Palacsinta (Traditional Thin Crepes)
Palacsinta are delicate, thin Hungarian pancakes similar to French crêpes. They are usually filled with jam, sweet cheese, walnuts, or cocoa, then rolled or folded and served with a dusting of powdered sugar.
Ingredients (Makes about 10–12 crepes)
- 1½ cups (190 g) all-purpose flour
- 2 large eggs
- 2 cups (480 ml) milk
- ½ cup (120 ml) sparkling water or plain water
- 1 tablespoon sugar (optional for sweet fillings)
- ¼ teaspoon salt
- 1 teaspoon vanilla extract (optional)
- Butter or neutral oil, for the pan
Instructions
- Prepare the batter
- Whisk the eggs, milk, water, salt, and sugar together.
- Gradually add the flour while whisking until smooth.
- Add vanilla if using.
- The batter should be thin and pour easily.
- Let the batter rest
- Rest for 20–30 minutes at room temperature. This helps create softer, more tender crepes.
- Cook the palacsinta
- Heat a nonstick skillet over medium heat and lightly grease it.
- Pour a small ladle of batter into the pan and swirl quickly to spread it into a thin layer.
- Cook for about 1 minute, until the edges lift and the underside is lightly golden.
- Flip and cook the other side for another 20–40 seconds.
- Fill and serve
- Spread with your favorite filling.
- Roll up or fold into quarters.
- Sprinkle with powdered sugar if desired.

- Apricot or plum jam
- Sweet cottage cheese (túrós) filling with sugar and vanilla
- Ground walnuts mixed with sugar
- Cocoa and sugar
- Cinnamon sugar
Tips for perfect palacsinta
- Add sparkling water for a lighter texture.
- If the batter becomes too thick after resting, thin it with a little milk or water.
- Keep finished crepes covered with a clean towel so they remain soft and flexible.
